Because of the technical demands of its wines, Champagne has often been associated more with the skill of the people and technology behind the bottles than with the land itself. Yet in the 1980s, amid a period in the wine world dominated by industrialisation, a handful of quality-focused grower-producers began championing terroir-driven Champagne, laying the foundation for the nuanced, expressive wines we celebrate today. Thanks to them, the names of Champagne’s grands crus are firmly etched in the minds of today’s connoisseurs. We can now delve even deeper into individual lieux-dits through an ever-expanding array of single-vineyard Champagnes. For decades, Philipponnat’s 1935-initiated Clos des Goisses from Aÿ’s monumental slope stood alone. The modern single-vineyard boom began in 1979 with Krug’s Clos du Mesnil, and the growth since the 1990s has been exponential. Through site-specific Champagnes, we have learned to thirst for such terroirs as Ambonnay Les Crayères, Cramant Le Bâteau, and Le Mesnil-sur-Oger Les Chétillons. The modern single-vineyard boom began in 1979, and the growth since the 1990s has been exponential Elevating the ‘autres crus’ Equally significant is the rise of Champagne’s autres crus, the once-overlooked villages without premier cru or grand cru designation. Montgueux and the Côte des Bar in the south have become particularly dynamic regions. Thanks to vigneron Emmanuel Lassaigne’s work at Jacques Lassaigne, Montgueux’s majestic Chardonnays are in high demand – not only by the major houses, which prize their structured elegance, but by discerning consumers seeking unique expressions. Another quickly rising village is Les Riceys – Champagne’s largest cru, with well over 800ha (1,980 acres) – where Olivier Horiot and Domaine Alexandre Bonnet showcase Pinot Noir’s distinctive power. If the classification were reassessed today, neither of these villages would remain autres crus. Following in the footsteps of the consistently magnificent Cédric Bouchard Roses de Jeanne Champagnes, the list of exciting producers in the Côte des Bar continues to expand, reflecting the subregion’s dynamism. Recently, I’ve been impressed by the bright, transparent non-interventionist style of Domaine de Bichery (Neuville-sur-Seine) and the sheer expressiveness of Clandestin (Landreville). The Champagne septet Chardonnay always remains in fashion in Champagne, but it is thrilling to see more regional expressions emerging. Among the most striking are Ulysse Collin’s single-vineyard wines from the up-and-coming Coteaux du Petit Morin, just south of the Côte des Blancs. The Sézannais and Vitryat regions are establishing themselves strongly, as is Montagne de Reims, which offers a wealth of exceptional Chardonnay sites. One of my personal favourites is Rilly-la-Montagne’s chalky Les Blanches Voies terroir, where both Vilmart & Cie and Huré Frères craft magnificent wines. Meunier, long out of fashion, has enjoyed a remarkable resurgence thanks to the passionate growers of the Vallée de la Marne. Once again in the spotlight through the work of, for example, Tarlant, Jérôme Prévost and Egly-Ouriet, today producers such as Nicolas Maillart, Gounel-Lassalle and Laherte Frères are elevating Meunier to unprecedented heights. Despite this progress, I believe Meunier still has vast untapped potential to reveal. In Champagne’s Pinot Noir heartland of the Grande Vallée de la Marne, houses such as Bollinger and Philipponnat are cementing their authority with a string of pure Pinot Noir releases. But what’s notable today is that the new wave of blancs de noirs is no longer chasing cult benchmarks like Bollinger’s Vieilles Vignes Françaises and Krug’s Clos d’Ambonnay – bottlings famed for their unapologetic richness. Instead, the spotlight is shifting to a fresher, more contemporary interpretation of Pinot Noir. Consider the precision of Nicolas Maillart’s Montchenot or the electric verve of Domaine La Borderie’s De Quoi Te Mêles-Tu?; these are wines embodying a new aesthetic that privileges finesse over power. In a nod to its past, Champagne is tentatively reviving its forgotten heritage grapes Arbane, Petit Meslier, Pinot Blanc and Pinot Gris. Let’s not overstate the trend – plantings of these cépages still account for just 0.4% of the region’s vineyard area, up only a fraction from 0.3% a few years ago – but the trajectory is undeniable: over the past two decades, these varieties have expanded by 45ha, now covering 136ha in total. The south of Champagne has quietly kept the flame alive, where Arbane, Petit Meslier, Pinot Blanc and Pinot Gris continue to offer an unmistakable local accent. Domaine Alexandre Bonnet’s Blanc de Blancs, for instance, is half Pinot Blanc, half Chardonnay. Arbane may remain an infamously meagre producer, yet vignerons such as Laherte Frères see real promise in Petit Meslier, particularly in the era of climate change, thanks to the piercing freshness it brings to the glass. Evolution, not revolution Freshness, rather than ripeness, has become Champagne’s new obsession. With harvests creeping into August and fruit coming in under a blazing sun, the challenge now is to preserve acidity, not to coax maturity. The old orthodoxy of 100% malolactic fermentation is giving way as more producers choose to let a streak of crisp malic acid sharpen their blends. Even the sacred formulas of brut Non-Vintage cuvées are being rewritten. Previously, reserve wines were prized for softening edges and adding richness, but today they are reimagined as a safeguard for vitality. Louis Roederer has gone so far as to reinvent its flagship Non-Vintage, now called Collection, introducing a perpetual reserve stored in gigantic vats – a safeguard of freshness that now defines the wine’s very DNA. Simultaneously, it has evolved from an ‘ageless’ Non-Vintage, with no reference to its base year or disgorgement, into a collectable, complete with edition numbering, like the Jacquesson 700 series or Lanson Création. The moment has finally arrived in Champagne to stop concealing the base year and other technical details and instead to celebrate them with pride. Falling sugar levels and minimal intervention The shift in Champagne’s taste profile goes hand in hand with a steady trimming of dosage. Despite the buzz in sommelier circles and wine-press headlines, the ultra-dry styles remain a statistical footnote: barely 3.6% of exported Champagnes carry less than 6g/l (extra-brut or brut nature). Yet the broader reality is unmistakable: sugar levels are falling fast. Dom Pérignon’s 2015 Vintage, for example, sits at just 4.5g/l. It’s not only prestige cuvées chasing purity; the entire region is recalibrating as even the world’s most popular Champagne, Moët & Chandon Impérial, is dropped down to a record low dosage of 6g/l. The old rationale of softening searing acidity with sugar has lost its purpose. In today’s warmer vintages, the dash of sugar is ‘seasoning’, tempering phenolic bite and extending the wine’s length and deliciousness. Few regions have leaned on sugar as heavily as Champagne. Traditionally, it has been added three times: first to enrich the must for higher alcohol (chaptalisation), then to spark the second fermentation in bottle, and finally as the sweetening dosage. Today, however, the pendulum is swinging towards authenticity, and sugar is a villain there. In a move pioneered by Agrapart in 2007, some vignerons are replacing industrial sugar with preserved grape must from the previous harvest to ignite the second fermentation (or, if bottling later, with the juice of the new season). Since the 2019 vintage, Fabrice Pouillon of Champagne R Pouillon & Fils has gone a step further, crafting his Champagnes entirely without external sugar. Even when dosage is applied, it comes from grape juice itself. It’s a small revolution – one that redefines purity in a region that was once synonymous with sweetness. If the first wave of Champagne’s game-changers sometimes veered into excess with bone-dry bottlings, overpowering oak, and (too) low sulphites, the next generation has found its stride with impressively sound and exciting wines, often achieved through minimal-intervention techniques. With offerings that are precise, vibrant and true to site, producers such as Jules Brochet and Domaine de Bichery exemplify this new, confident minimalism. For those chasing innovation, Famille Moussé is a must-visit. Cédric Moussé, a true inventive force, equips his ultra-sustainable winery with every tool and gadget imaginable. In the village of Cuisles, he has even launched Champagne’s first cooperative to cultivate vineyards with the aid of robots. For a greener future At the same time, Champagne is getting greener. Comité Champagne is pushing for a collective effort, while the grandes maisons are turning corporate ambition into vineyard action. The EPI Group trio (Piper-Heidsieck, Charles Heidsieck and Rare Champagne) were the first in the region to achieve B Corp certification. Pernod Ricard’s houses – GH Mumm and Perrier-Jouët – are championing regenerative viticulture. Ruinart, the sustainability flagship of LVMH’s Champagne empire, houses a landmark vitiforestry project across its vast Taissy holdings. But the movement is not confined to big brands – for example, Aurélien Lurquin and Domaine La Borderie are doing impressive work. And while small houses remain Champagne’s most visible champions of organics and biodynamics, it is Louis Roederer that has rewritten the scale: with 130ha now certified organic, it alone represents almost 6% of Champagne’s total organically certified vineyard area (2,240ha as of the end of 2024). As transportation makes up the lion’s share of Champagne’s carbon footprint, producers are finally looking at rationalising their packaging. Cédric Moussé recently developed the lightest bottle so far, which will enter the market in two years’ time. He also transitioned from traditional metal capsules to recyclable paper ones, which reportedly have a carbon footprint just 20% of that of aluminium. Ruinart deserves high praise for its Second Skin bottle cover, moulded to the contours of the bottle. Fully recyclable and made from 99% paper, the case is marketed as nine times lighter than its predecessor. Beyond the sustainability gains, it elegantly addresses a quality concern: Ruinart’s hugely popular Non-Vintage Blanc de Blancs in clear glass is now protected from light-strike – a phenomenon that can rapidly degrade Champagne yet is overlooked by consumers and the trade alike. Moving away from clear glass is not just a matter of quality, it is also a sustainability imperative, as these bottles require new, rather than recycled, glass for production. The Champagne landscape has never been more thrilling. Beyond the classic offerings, you’ll find late-disgorged gems, rosé de macération, clos and other site-specific expressions; perpetual reserves; and cuvées aged in a multitude of vessels from oak and sandstone to glass and clay amphorae, each promising a fresh take on the region’s tradition. Today’s younger buyers crave brands that marry luxury with ethics, and Champagne is responding. The rules are changing, the classics are evolving, and the next sip could redefine everything you thought you knew. Browse all Champagne listings

Terroir vision: the future of Champagne

What springs to mind when you think of Bordeaux? Probably châteaux the size of medieval palaces, formal dinners, and rows and rows of pristine vines, neatly manicured rose bushes the only other signs of plant life. What you’re unlikely to be imagining are cow horns stuffed with manure buried in the ground, or horse-drawn ploughs churning through earthworm-rich soil. ‘In the past, in Bordeaux, you were scared to say you were growing biodynamically,’ says Corinne Comme, who manages 10ha of biodynamic vines at Château du Champ des Treilles in Entre-Deux-Mers with her husband Jean-Michel. ‘Now it’s trendy.’ An engineer and geologist, Jean-Michel Comme was behind the first transition of a grand cru classé estate on Bordeaux’s Left Bank to biodynamics. Although he and Corinne first came across the concept in the mid-1990s, he didn’t begin to advocate for the approach at Château Pontet-Canet in Pauillac until the early 2000s. ‘Corinne was scared,’ he recalls. ‘She thought they would fire me.’ "Behind the more esoteric elements is a series of principles that have been shown to improve soil health and vine strength" Originally laid out in a series of lectures by Austrian philosopher, scientist and social reformer Rudolf Steiner in 1924, biodynamic farming emerged as a holistic approach to agriculture before quickly evolving into formal certification movements. At its core, biodynamic farming centres on soil health and biodiversity; most distinctively, it operates according to the lunar calendar, with practitioners timing agricultural activities around specific ‘fruit days’, ‘root days’, ‘leaf days’ and ‘flower days’ to align with cosmic rhythms believed to influence plant growth and agricultural processes. For many in Bordeaux – Jean-Michel Comme included – this all sounded a bit wacky. ‘I was young, full of expectations about chemistry; the way biodynamics was presented was so remote that I felt it was crazy,’ Comme says. ‘But with experience, we did change our minds.’ Why? Because behind the more esoteric elements is a series of principles that have been shown to improve soil health and vine strength. In vineyards, biodynamic farming means specific practices such as hand-harvesting, using natural composts made with specific herbal and mineral preparations, avoiding chemical fertilisers and pesticides, and treating the entire vineyard as a self-sustaining ecosystem. In the cellar, there’s an emphasis on minimal intervention, using native yeasts, avoiding commercial additives, keeping sulphur use to under 70ppm, and employing gentle pressing and ageing techniques that respect the wine’s natural development. While biodynamics took root in regions like the Loire and Burgundy in the 1990s, biodynamic winemaking in Bordeaux largely began in the new millennium, with just two early St-Emilion exceptions: Château Meylet, which has been practising it since 1987, and Château Fonroque, experimenting since 1995 with direction from Loire legend Nicolas Joly. This delay largely stemmed from two factors. First, Bordeaux’s humid maritime climate means that vines are especially vulnerable to both downy and powdery mildew, making the avoidance of synthetic fungicides a risky business. Second, large châteaux with multimillioneuro operations were reluctant to abandon the technological viticulture and winemaking that had built their global reputations in the first place. Comme, however, was convinced of the virtues of biodynamics. He began by seeking the assistance of François Bouchet. The Loire Valley winemaker was one of the first in France to pioneer biodynamics, also consulting for Domaine de la Romanée-Conti, Domaine Leroy and Domaine Leflaive in Burgundy. Bouchet guided the transition to biodynamics at Comme’s Château du Champ des Treilles; then, he persuaded Château Pontet-Canet owner Alfred Tesseron of its merits. In 2004, it was trialled on 15ha (about 20% of the estate’s total growing area) of the fifth growth at which Comme was also technical director. A severe mildew outbreak in 2007 led to the use of pesticides, undoing three years of progress, but it then became a crucial lesson that strengthened their long-term commitment to biodynamics. ‘They believed the fruit had more expression, more brightness,’ says the current technical director at Pontet-Canet, Mathieu Bessonnet, who reveals that they converted the whole of the growing area soon after. ‘It’s obviously much more difficult, time-consuming and expensive, so it was very risky,’ he adds. Since then, biodynamic farming has become a significant and growing practice across different classed growths in the region, with some of the most prestigious estates – such as Château Latour and Château Palmer – adopting biodynamic methods (the latter certified). ‘The link between the wines and the place where the fruit came from had become less and less obvious,’ says Château Palmer’s technical director Thomas Duroux, commenting on the region’s turn to the trend. He notes that, since the noughties, many have adopted organic practices in a bid to reverse this perceived drop in terroir definition. ‘Biodynamics is, in a way, the same story as organic farming, but with a larger vision,’ he adds. This shared perspective has led to more cooperation between practitioners. Every spring, the Médoc branch of the Biodynamic Agriculture Movement gathers at Château Ferrière. After unearthing a thousand manure-filled cow horns and replacing them with silica-filled ones (a process reversed in autumn to produce preparations 500 and 501, required for Demeter certification), participants share wines and gardengrown salads. The humus removed from the cow horns is stored in a cold, damp facility and made available to members. ‘We do that for free,’ says Claire Lurton, owner of Château Ferrière. ‘It’s a community.’ Though ‘community’ might be too strong a word for some, these gatherings symbolise a deepening professional exchange that has emerged among estates of all sizes through the practice of biodynamic winemaking. In fact, the shift among the classed growths has happened at the same time as these practices have been adopted by smaller growers arriving in the region. Christophe Landry of Château des Graviers, for example, returned to Arsac in the 1990s and began practising biodynamics around the same time as Comme at Pontet-Canet. He’s consulted for the Lurton estates and other properties. Originally from Minervois in Languedoc, Michel Théron established Clos du Jaugueyron nearby and has been certified biodynamic since 2008, while Laurence Alias and Pascale Choime – who are both from southwest France – established Closerie des Moussis, a patchwork of sites across 2ha, including a 170-year-old pre-phylloxera plot leased from Théron. On the Right Bank, other producers began switching lanes even earlier. Le Puy, owned by the Amoreau family, began practising in 1998, with certification since 2013, and Château Gombaude-Guillot in Pomerol has been certified biodynamic since 2006. While larger estates like Latour and Palmer collaborate on issues like mildew, smaller producers tend to engage more with one another. Shared biodynamic practices, however, are definitely helping to break down barriers. For example, Château Haut-Bages Libéral maintains regular communication with its neighbours at Château Latour, and the son of Théron at Clos du Jaugueyron interned at Château Palmer for two months. Can we speak of a unity of praxis? Not exactly. There is considerable variation in which aspects of biodynamics winemakers emphasise, regardless of estate size. The primary aim across the board is achieving living soil with rich biodiversity to promote deep-rooted vines. In pursuit of this, some winemakers emphasise tree growing or cover cropping (like Haut-Bages Libéral, which also recently planted a variety of local and fruit trees). Others, such as Le Puy, let nature take its course, allowing a diverse array of plants and flowers to sprout from the earth. Whether certified or not, biodynamic practitioners throughout Bordeaux use homeopathic treatments like nettle teas for the vines – they are believed to stimulate soil health, enhance plant immunity and improve nutrient uptake. More important than any of this, however, is the concept of energy. How can the energy of the plant be retained as its raw material transforms into wine? Every winemaker I visited was at least intrigued by the concept – and most were captivated. After a few days in the sometimes eerily flat Médoc, I drive through the verdant hills of St-Emilion to Le Puy, arriving with a raised spirit. Standing before a 5,000-year-old Celtic cromlech, Harold Langlais, the estate’s director, tells me, ‘Le Puy is a place of energy and life,’ pointing to its deep history as an intersection of water springs. At modern-day Le Puy, this philosophy extends from the vines to the cellar. Indeed, many others I speak to express that, since adopting biodynamics, the most striking change in their wines has been an increase in ‘energy’. It’s a term without a precise definition, but according to Château Palmer’s makers, something shifted with the 2015 vintage, the second year after full conversion. ‘You cannot measure it,’ Thomas Duroux says. ‘You can just feel it.’ At Château Durfort-Vivens, where the vineyard was operating under biodynamic principles by 2013 (with full conversion by 2016), owner Gonzague Lurton recalls the 2014 vintage as ‘the first where you really feel the energy of biodynamics’. It’s tactile and warming, with a sophisticated grip and charm. ‘It’s what I love – the linearity of tannins, never weak from start to finish. With many of the estates I visited, their wines showed an immediate appeal, vibrant even in their youth. Is energy just another way of describing freshness? Laurence Alias at Closerie des Moussis trained as an agricultural engineer; for her, energy and vitality are tied to the physical properties of grapes grown biodynamically. ‘We have more acidity, that’s an analytic fact,’ she tells me, standing in front of a newly acquired plot of vines bordered by forest. It might be romantic to think of energy as something ineffable, but it’s also rooted in what remains within the grapes. ‘Our idea of energy is based more on Einstein than Steiner,’ Langlais later qualifies. ‘Energy is matter.’ Biodynamic winemaking in Bordeaux: five to follow Château Pontet-Canet At the 55ha Pontet-Canet estate in Pauillac, an immensely smooth operation is palpable. Winemakers here have spent almost two decades honing their biodynamic craft, continually moving towards a goal of self-sufficiency for the estate. Sturdy Comtois horses, introduced in 2008, now work half the vineyard, preventing soil compaction. Vineyards are sprayed over a single day using compost and herbal teas produced from plants grown in and around the property and processed in the state-of-the-art infusion room. Biodiversity-boosting fruit trees and hedges have been planted. The estate even employs a carpenter who repurposes wood from vats used on the property. Ageing involves custom-made wooden eggs and qvevri-style amphorae, with no fining and minimal filtration. The result? A Pauillac with untypical levels of energy and minerality, and a plush, velvety texture. But it’s more than that – according to Bessonnet, thanks to a low-intervention approach across the board, ‘you can really feel the soil.’ Château Palmer Thomas Duroux’s conviction in biodynamics is based in what he calls a ‘holistic vision’. ‘We started to see the entire place as a living organism,’ he says of Château Palmer, one of the most storied and historically significant third-growth estates in Bordeaux. When converting (a process that started in 2009), the Margaux estate was initially guided by François Bouchet’s son Matthieu, but now it follows its own evolving philosophy, integrating cover crops, animals for fertilisation and estate-grown vegetables and meat. ‘It’s just going back to agricultural common sense,’ Duroux says. ‘That was the way to grow anything before World War II.’ This respect for nature results in wines that are deeply tied to their terroir. ‘If I had to describe the wines how they are today, compared to how they were before, I’ll just say that it’s not a revolution, but we have the feeling that the wines have a better identity,’ says Duroux. He likens biodynamics to restoring an old painting: ‘Suddenly, you see small details that you were not able to see because of the dust.’ The estate uses stainless-steel vats for fermentation and temperature-controlled rooms for barrel-ageing, combined with nativeyeast and low-sulphur winemaking, to produce its esteemed Alter Ego and Château Palmer cuvées; both have been increasingly celebrated among critics and drinkers since the turn to biodynamics. ‘We just think it does help to go a little bit further in the interpretation of the place,’ says Duroux. Château Durfort-Vivens Standing over a rustic sorting table explaining how it used to work, Gonzague Lurton is visibly passionate about the savoir-faire of the past. This sensibility is reflected in the current winemaking practices, too, and in the second-growth Margaux estate’s reputation (and critics’ scores) increasing year on year. The thing to emphasise is that what began with a biodynamic approach in the vineyards led to a series of domino effects that changed the character of the wines. In search of what Lurton calls greater ‘singularity’, the proportion of Cabernet Sauvignon had already risen to over 90% by 2014 (from around 75%); and with the use of indigenous yeasts during fermentation and the reduction of sulphur levels over time (initially sparked by Demeter’s upper limits of 70mg/l), the wines have become more aromatically complex and expressive. The introduction of amphorae by Italian producer Tava has allowed for microoxidation without overextraction, contributing to a more delicate balance of flavours, with the 2019 estate wine a blend aged one third in amphorae and the rest in barrel. ‘It’s not a big wine,’ says Lurton. ‘And it’s what I was looking for with biodynamics, in terms of style.’ Château des Graviers Christophe Landry’s pioneering status in Margaux stems from an instinct refined over decades at his own estate. He grows medicinal plants — horsetail, absinthe, calendula, chamomile — for vineyard treatments, as well as using the manure from his own cows. ‘What we need to remember is that biodynamics isn’t just a practice,’ he tells me. ‘It’s about finding your own path to self-sufficiency.’ His precision extends to the cellar, where he uses concrete tanks, amphorae and oak barrels (produced according to the biodynamic calendar) tailored to each of the five cépages’ oxygenation needs, then ages the wines for different lengths of time. Timing is everything, with harvest choices also following the biodynamic calendar. Obsessive care for the vines’ life cycles goes hand in hand with the level of precision in the cellar. The outcome is two phenomenal wines that are, as Landry puts it, ‘thirstquenching’. Château des Graviers and Quintessence — which contains a higher proportion of Petit Verdot and is aged longer in barrel and amphorae — are aromatically expressive, velvety and strikingly lively, with the latter offering more depth and an enveloping finish. Expanding to 18ha, Landry has also turned his focus to Clos Dufourg, cultivating vines on previously wild land nearby and hand-building a striking new cellar with cement tanks painted with clay from the surrounding earth. Le Puy For technical director Harold Langlais, the Le Puy estate’s significance lies in how it challenges Bordeaux’s conventional identity. Outside of the region’s traditional focus on appellations and classifications, Le Puy sits on a plateau near St-Emilion. The estate’s land is unusual, with no topsoil but a deep limestone bedrock beneath red-brown clay, which forces the vines to develop deep roots to access the earth’s natural water and nutrients. This is further supported by horse-ploughing and biodynamic sprays made from horsetail, buckthorn and nettles, which grow on the property. ‘Our approach focuses on rooting the vine deep,’ Langlais explains, ‘encouraging it to search out hidden nutrients.’ A vigorous wind circulates around the vines, and Langlais explains the effects of the elements. ‘The beauty of Le Puy is that it’s an acid factory. The whole place creates acidity in the berries.’ The biodynamic philosophy extends to the winemaking, with two different processes applied to their 100% Merlot cuvées. Cuvée Emilien uses a ‘decantation method’, or ‘fermentation by infusion’, while Barthélemy is produced with zero sulphites and a process of lees-stirring called ‘dynamisation’, which is done on fruit days and involves a specific motion to create a vortex in the old barrels it ages in. ‘Barthélemy is much more intense,’ Langlais says. ‘All the matter taken by the plant is in there.’

Taking root: the rise of biodynamic winemaking in Bordeaux

The beauty of Bordeaux wines is that each vintage follows the next, yet no two are ever alike. Reading back over my notes on the 2025 vintage, one thing becomes clear: one could almost write the exact opposite of 2024. In 2024, excessive rainfall during ripening forced some châteaux to delay their harvests with great care. In 2025, the situation was reversed: in the vineyards, one could almost imagine rain dances, pleading with Mother Nature to water the parched soils. Drought defines the vintage. Opposite in their development, the two vintages nevertheless converge on one point: volume. 2025 stands as the smallest vintage since 1991 – a statement that already applied to 2024. In Bordeaux, a pressing question now arises: can great, even very great vintages – as 2025 appears to be – still coexist with generous yields, as in 2016? Let us remain optimistic. 2025 is a beautiful vintage, which comes as a relief for the entire industry. Yet a deeper question lingers: does “normal” still exist in viticulture in an era of climate disruption? What was the biggest challenge for winegrowers in 2025? Eric Boissenot: Overall, the year was fairly easy from a vineyard perspective: no major disease pressure, low mildew risk, and the vines coped well with the drought—likely even better than in 2022. Thomas Duclos: Most likely, the biggest challenge was staying calm and level-headed towards the end of the growing cycle, which saw a heatwave around mid-August followed by rainfall in early September. Julien Viaud: With hindsight, this vintage was much easier than others. Spring and summer conditions were generally favourable. The greater challenge came in the cellar, where it was essential to manage the richness of the material. The fruit was abundant and concentrated, and the winemaker’s role was to be precise, measured, and restrained in order to express the very best the grapes had to offer. Could you share a few thoughts on the 2025 yields? Eric Boissenot: Yields were low, even very low. This was due, on the one hand, to limited floral initiation (resulting in fewer bunches), and on the other hand to small berry size at harvest (across all grape varieties), caused by the low rainfall throughout the vintage. Thomas Duclos: The 2025 vintage was affected by a low number of bunches—a direct consequence of the 2024 conditions (poor floral induction) combined with a dry growing season. The result is therefore low yields. Julien Viaud: Yields in 2025 were not high, mainly for physiological reasons. The issue is that both the size and number of bunches—determined the previous year within the buds—were limited from the outset. The potential was therefore already constrained. How would you describe the style of the 2025 vintage? Eric Boissenot: First of all, it is a very early vintage, shaped by a warm and dry climate. It then benefited from rainfall in late August and early September, which helped the vines manage water stress. As a result, alcohol levels remain moderate (around 13–13.5% vol) for a warm year. While it shows a warm and very ripe character, it also retains a classic, distinctly Bordeaux style that is both balanced and highly drinkable. Thomas Duclos: 2025 is a Bordeaux vintage shaped by climate change. Julien Viaud: It is a sunny vintage, but not “solar” in the sense that it allowed for ripe grapes full of fruit expression, without excessive sugar (and therefore alcohol), and without a loss of acidity (and thus freshness). It is an approachable, generous, and charming vintage, with wines bursting with aromas and delivering real pleasure. If you had to sum up 2025 in one word or a short phrase, what would you choose? Eric Boissenot: High density Thomas Duclos: Futuristic Julien Viaud: Intense and fast-paced Conclusions Reds: Well-balanced wines, showing fine concentration and the freshness so characteristic of Bordeaux—perhaps, as Julien Viaud suggests, a style the world might envy. They retain a solid yet never heavy tannic structure, resulting in wines that are both vibrant and structured. A beautiful vintage, even exceptional in certain cases. Whites: The first grapes arrived at the cellar as early as August 11. The wines are highly expressive, with good mid-palate weight and a certain creaminess. They also stand out for their freshness, which brings energy and lift. Sweet wines: When the rains came in late August / early September, the grapes were in excellent health, allowing Botrytis cinerea to develop evenly. The style is rather opulent, with lovely complexity. Bordeaux 2025 overview: A historically low-yield vintage, the smallest since 1991. A prolonged heatwave period, exceeding those of 2003 and 2022. Marked drought throughout the summer, enhancing grape concentration. Decisive rainfall at the end of August / beginning of September, helping to balance ripeness. Exceptionally early harvest, among the earliest ever recorded. Moderate alcohol levels, thanks to day/night temperature variation and late August / early September rainfall. Low pH levels, bringing freshness and tension to the wines. An extreme vintage in climate, yet precise and balanced in the glass. Rarity, freshness, and control: 2025 ticks all the boxes of a great modern Bordeaux. Oak barrels have been used in winemaking for thousands of years. While initially their purpose was simply as a holding vessel, today it is much more than this. As we have learnt about wine production at a molecular level, we have discovered the unique interaction between oak and wine – adding flavour, textural complexity and increased ageing potential. These intrinsic qualities have seen oak at the forefront of fine wine’s greatest success stories – but also some of its greatest failures. The use of oak to improve a wine requires great skill and finding that balance has shaped the modern history of fine wine.  What is rather beautiful about winemaking, particularly in fine wine circles, is that despite the input from developments in science and technology, production remains an artisan craft, relying both on tradition and technology. The barrel-maker is a perfect example of this partnership and no one understands this better than François Frères. This lauded Burgundy cooper’s ties to the world’s greatest wines make it one of a very small number that have lived through the development and fashions within fine wine.  Today, business has never been better for François Frères; they produce 30,000 barrels a year and export to every major wine region in the world. The secret to the François Frères barrels historically, Gigandet believes, is their consistency, while the all-important signature toasting is paramount. To keep up with the ever-growing world of fine wine, François Frères produces tailor-made barrels that fit the varying climates and varying styles of each winemaker, meeting the standards set by today’s precision-led winemaking. Despite the growth of the business in recent years, François Frères still remains intrinsically linked to its homeland in Burgundy and the specific microclimate of Saint-Romain that is so important for the seasoning of their oak – another key factor behind the company’s success. “The microclimate of Saint-Romain, in a windy and pollution-free environment is ideal for the seasoning and drying of the oak. This oxidation of phenolic compounds under the influence of fungi, releases enzymes that hydrolyse the phenolic compounds, reducing the wood’s astringency, producing oak of the finest quality for wine production,” Gigandet tells me. The art of the cooper is much more than just sawing and toasting – it’s about sourcing, traceability, control of drying time and heating, hygiene, temperature control, sorting and more. With increased knowledge, the quality of the barrels, like that of the wines, has greatly improved. Even just a few years ago, Gigandet admits that in colder Burgundy vintages, sometimes their barrels jarred with the wine – they “brought too much tension and could sometimes seem too austere”. But now they have a better understanding of the qualities their barrels can bring to Burgundy: “François Frères barrels remain attractive to winemakers because they are great at retaining freshness and minerality.” Perhaps most importantly, François Frères wants its barrels to amplify a wine’s intrinsic qualities. “It wants to accentuate the beautiful tannic structure of a wine, contribute to its flavour but without excess of sweetness from the toasting, as well as amplifying the wine's tension and minerality, helping retain its freshness and its fruit,” Gigandet says. As technology has developed, so has François Frères. It is what Gigandet aptly calls “the evolution of taste” – “the cask has evolved considerably over the last few decades along with the quality of the wines. Today, the barrel is much more specific, manufacturing almost tailor-made barrels for each customer’s needs.” The business was founded by Joseph François in the early 1900s, never imagining that being a cooper would become a full-time job. Back then, Gigandet reminds us, “It took several trades to live.” But the next generation, Robert and Henri François, saw the demand for oak casks rise, at that time mainly used to transport wines. They took the operation full-time, creating the François Frères brand in 1942. In those days, as Gigandet points out, “The tradition of maturing wines in barrels was reserved only for the very top red and white wines of Burgundy and the great Bordeaux châeaux.” Even within these regions, barrels were a luxury, re-used year after year given their expense, therefore keeping the demand for new barrels low. By the 1960s the brothers were met by the development of stainless steel and plastic containers. The barrel quickly lost it supremacy as the preferred vessel for transportation and demand plummeted. It was only the top producers that helped keep the cooperage going. By the 1970s François Frères was producing barrels for one of the world’s most famous estates, Domaine de la Romanée-Conti – a partnership that would be instrumental in the continuation of the business through a difficult period. The next generation – Robert's son, Jean – was confronted by the economic downturn of the early 1970s and turned to export to save the family business. Fortuitously at this time, oenologists in the United States started to highlight how ageing wines in new oak barrels brought complementary flavours and complexity to the wines. In the 1980s, the French market caught onto the idea and both export and domestic markets grew. The oak barrel was entering an era where it would become the star of the show – and a must for all top producers. François Frères’s reputation for working with the best saw it perfectly placed to capitalise on this new-found love for the barrel. But according to Gigandet, it wasn’t just the fashion of using new oak in the 1980s and ’90s that saw such a huge increase in demand. This trend emerged just as wine exports exploded. What he calls “the democratisation of wine” saw the world of wine suddenly open up to the middle classes – and this increase in sales saw an ever-increasing need to maintain quality and improve consistency. Such demand prompted and funded a better scientific and technological understanding of wine production. More importantly for François Frères, it fuelled the need for a better understanding of what barrel-ageing does to wine – and why. It was already clear that contact with new oak changed wine profoundly. Most obviously the aromas and flavours of the wine develop, becoming more complex. These aromas and flavours are formed during the toasting of the barrels. “It is this toasting of the barrel that remains the signature of the cooper,” explains Gigandet. But the oak didn’t just impact the flavour, they came to understand that, being porous, oak allowed the wine to undergo “controlled oxygenation”. The exchange of air through the oak staves, in particular for red wines, helps stabilise the colour and polymerise the tannins. This polymerisation not only softens the wine, but brings a textural complexity, a millefeuille layering of mouth-feel brought about by the linking of long tannin chains, encouraged by the micro-oxygenation process that the wine goes through when aged in oak barrel. “François Frères barrels are ageing tools, which contribute to the textural improvement of wines, when used wisely,” Gigandet explains. As the wine world’s love of oak grew, François Frères’ main export customers went from little-known names to pioneers in their respective regions – with Robert Mondavi in the US, Angelo Gaja in Italy, Nicolas Catena in Argentina and Australia’s Rosemount winery. Each of these producers further cemented the cooper’s reputation, representing the very pinnacle of oak barrel production. Of course, like all fashions, the oak craze of the ’90s saw some extreme uses – 200% new oak ageing or an over-reliance on oak to provide flavour to wines that lacked the natural concentration to carry it. This saw many producers and consumers react strongly against its presence in wine at all. Even Gigandet admits that there are wines with “excess woodiness” to their detriment. Today, the barrel also has to compete with new trends in wine maturation – concrete eggs and clay amphorae, for instance. But while these new vessels have captured the imagination of the world’s top winemakers, it is not necessarily at the expense of the barrel. “The barrel has an important oenological role in the development of wines from certain grape varieties,” states Gigandet – notably Cabernet Sauvignon, Merlot, Syrah and Pinot Noir. But he also outlines how different ageing vessels combined can also benefit a wine’s potential for complexity. This is certainly the case amongst some leading producers in Bordeaux and Burgundy that are using both oak barrels and alternative ageing vessels. Coopers like François Frères have weathered the changing relationship wine has had with the barrel; with shifting views of critics and drinkers over the last century. Fortunately for fine wine lovers, there’s little sign of oak fading into the background. Oak remains a vital ingredient in many of the world’s greatest wines, adding to its flavour, textural complexity and – of course – ageing potential. Today oak has never been so deftly handled, bringing so much to a wine, while retaining the grapes’ natural expression. The art of the cooper lives on. Read more Editorial

Finding the balance: the art of the cooper

Few people have been lucky enough to be as immersed in Burgundy’s finest wines as Martin Donatsch. His father bought a pallet of top Burgundy, including those of Domaine de la Romanée Conti (DRC) and Armand Rousseau, every year from the early 1970s onwards. Martin’s birth in 1978 – a fantastic vintage in Burgundy – only encouraged his father to buy more, and Martin, now in his early 40s, has been enjoying wines from the family collection ever since. Just last week, he uncorked a 1978 DRC Echézeaux. This immersion has provided him with an extraordinary understanding of Chardonnay and Pinot Noir – something that has doubtless helped him become one of the world’s great emerging winemaking talents. Donatsch is one of a small number of producers growing Pinot Noir, Chardonnay and the native Completer grape in Bündner Herrschaft in Switzerland. This tiny Swiss valley, for the time being, remains largely unknown – but, as Donatsch certainly believes, it may just be one of the world’s last great regions for fine wine production. The altitude (500 to 700 metres above sea-level) sees the vines flower a week later than is typical in Burgundy, yet picking dates are three to four weeks later. This provides a much longer growing season, allowing for complex flavours and aromas to develop in the grapes. Despite the altitude, the grapes reach good levels of ripeness thanks to the warm, dry wind – known locally as a “foehn”, that sweeps through the valley. Unlike Burgundy, autumns here are dry, so there is rarely pressure to pick before rain arrives, allowing for additional hang-time. The altitude keeps the acidity high, offsetting the naturally slightly higher alcohol (typically around 14%), meaning the wines never feel overly alcoholic. While Bündner Herrschaft has been home to Pinot Noir since the 15th century, Donatsch – now in the hands of the fifth generation – has pioneered the quality revolution in the region. Martin’s father Thomas Donatsch was not only the first to – then illegally – plant Chardonnay in 1975, but also the first to introduce French barriques to Switzerland, influenced by his vigneron friend André Noblet, the winemaker at Domaine de la Romanée-Conti from 1945 to 1986. In the early 1970s, Thomas – a young 20-year-old about to take on the family winery – set off to learn from the best. Obsessed with Burgundy from a young age, he knocked on the door unannounced at Domaine de la Romanée-Conti. In a fortuitous set of circumstances, Noblet had just returned from his first ever holiday (in Gran Canaria) and the first extended time away from his beloved wines. He had missed his wine cellar so much during the trip, he couldn’t wait to return. Finding the young Donatsch sitting by the door and desperate to reacquaint himself with his wines, Noblet invited Thomas to spend the afternoon with him tasting the different cuvées from barrel. Martin believes his dad gained Noblet’s trust by initially criticising DRC’s Montrachet 1968. Tasting the wine Donatsch reportedly said, “There is no way this wine could come from the great Montrachet!” A little precocious, perhaps: fortunately Noblet agreed it wasn’t his finest vintage, but the result of experiments in the winery. It was the beginning of a lifelong friendship, with Donatsch returning to the DRC cellars every year. On each visit, Noblet would always pour him a glass of Montrachet 1968 and ask his opinion before tasting any of the other wines. It wasn’t long before Donatsch was buying a pallet of Grand Cru Burgundy every year (at that time a bottle of La Tâche was just over £35 a bottle). Noblet also started to help Donatsch improve his Pinot Noir – first by giving Thomas his first three French barriques. These weren’t just any old barrels though, they had previously held La Tâche and were made by François Frères – who at the time had just two customers, Domaine de la Romanée-Conti and Henri Boillot. Donatsch took the barrels back to Switzerland, and the winery has been using François Frères barriques ever since. I asked Martin why the introduction of French barriques in Switzerland was such a revolution for the region. At the time, he says, the Swiss wine schools were obsessed with cleanliness – teaching the importance of filtering wines, using protective winemaking methods and using stainless steel tanks even for the red wines. The use of barrels was the opposite; it meant no additional filtering and a more oxidative environment. Donatsch believes the introduction of barriques around the world revolutionised fine wine. Angelo Gaja was the first to do it in Italy; Torres the first in Spain; Mondavi in the US; and Keller in Germany. But Thomas Donatsch was doing this 10 years before any of them, thanks to the influence of André Noblet, as well as Jean-Bernard Delmas – the winemaker at Château Haut-Brion, another of Thomas Donatsch’s influential friends.  Speaking with Martin Donatsch, you can’t help but feel he has got all his priorities in order. The small size of his winery means he can control every aspect of production, while benefitting from the variety that a life in wine can offer. Producing just 35,000 bottles a year means that when he is not in the vineyard tending his crop, he is in the winery, or fulfilling orders and redesigning his website (graphic design is another passion of his). Being one of the country’s most prestigious winemakers he sells his wine into the country’s top restaurants and luxury hotels, who can’t get enough of his wine. Donatsch’s annual release of wines sells out in just hours. While this is a great sign of his talents, it is also why many people outside of Switzerland have never heard of, let alone experienced, the world-class Pinot Noir and Chardonnay from the winery. Despite the demand for the Donatsch wines, there are no plans to expand: firstly because the authorities won’t allow it, but second because Martin loves the “human” size of the business and doesn’t want to lose that. Martin is, however, keen for more people outside of Switzerland to taste them. Beyond the tiny volumes that make it as far as export, to source these extraordinary wines you’ll have to (when one can) visit the winery yourself. You may just, knocking on the cellar door unannounced, receive a welcome as warm as young Thomas Donatsch did at Romanée-Conti.  Browse the latest releases from Domaine Donatsch or explore more Editorial

The high life: Martin Donatsch

2001 Chambolle-Musigny, Premier Cru, Les Amoureuses, Domaine Jacques-Frédéric Mugnier (and lashings of Beaujolais) – chosen by Daniel Johnnes, Wine Director of The Dinex Group and Founder of La Paulée, La Fête du Champagne, La Tablée and Pressoir  “This holiday I plan on opening several bottles of great wine. Great doesn't necessarily mean expensive or rare. I'll be sure to drink plenty of Beaujolais and mostly from my favorite producers, Morgon from Marcel Lapierre, Fleurie from Jean-Louis Dutraive and Chiroubles from Domaine Thillardon. As much as they are "drink everyday" wines, they also have the magic power of putting a smile on everyone's face.  “Yet, for that really special wine, I plan on opening a bottle of Chambolle-Musigny Premier Cru Les Amoureuses 2001 from Domaine Jacques-Frédéric Mugnier. Chambolle-Musigny is among my favorite villages in Burgundy and the Amoureuses vineyard could easily make a case to be classified as Grand Cru. It combines the perfume, texture, elegance and persistence typical of the very best red Burgundy. The style of Domaine Mugnier is one of refinement and grace. And with 20-plus years’ age, it should be perfect for drinking now. Even though it will accompany a roast chicken, this wine is like a celebration and a meal in and of itself.”  2018 Klein Constantia Vin de Constance – chosen by Jeffrey Koren, Head of Wine at Marceline, London  “While it’s easy to open a perfunctory bottle of Port or Sauternes at the end of a Christmas meal, the oh-so-delicious Vin de Constance by Klein Constantia has become my go-to sweet wine for the festive period over the past few years. Steeped in history, Vin de Constance was famously a favourite of Napoleon and lauded by authors like Jane Austen and Baudelaire. These days, winemaker Matt Day has revived this legendary dessert wine to its former acclaim. It always offers wonderful notes of apricot, honey and spice. But most importantly, it’s balanced by refreshing acidity that is an absolute necessity after an indulgent holiday meal.”  Hauller Frères Pinot Gris La Chappelle Signature – chosen by Joséphine Duffau-Lagarrosse, Ch. Beauséjour   “Ludovic Hauller is a long-standing friend I met during my studies in Burgundy. I appreciate the precision that his family channels into the wines, and this cuvée showcases great finesse, with freshness and elegance, mirroring the granite terroir in which the vines grow. It’s a Pinot Gris of remarkable complexity, hailing from a plot that sits below the Chapelle Saint-Sébastien de Dambach-la-Ville. Ludovic introduced me to Alsatian wines, which I knew little of previously, and I love this cuvée. As for when, this is definitely the kind of bottle I would open in the days following Christmas, with my family, playing board games by the fire and putting the world to rights, patiently waiting for the New Year!”  2002 Champagne Salon, Giuseppe Mascarello’s 2017 Barolo Villero, Tiberio’s 2018 Colle Vota – chosen by Lorenza Sebasti, Castello di Ama  “As usual, this Christmas we will open a magnum of 2002 Champagne Salon. I remember we had the chance to buy a few magnums a long time ago as they were precisely the birth years of our children (1997, 1999 and 2002). Then I guess I will spoil everyone at home with a beautiful Barolo Giuseppe Mascarello Villero 2017 and Colle Vota Montepulciano d’Abruzzo 2018 from my dear friend Cristiana Tiberio. She makes very few bottles of this very elegant and vibrant wine, which is among my favourite reds.”  2021 La Morandina Moscato d’Asti – chosen by Donald Edwards, Head Sommelier at La Trompette, London  “Beyond the best white Burgundy I can lay my grubby mits on, I’ll be cracking the second bottle on a case of La Morandina’s 2021 Moscato d’Asti – part of a new festive tradition. Back when my wine appreciation was still protean, I heard a rumour that Moscato d’Asti – the sweet fizzy floral stuff that we sold in my Glasgow Oddbins – ages magnificently. Twenty or so years later, I’m the Head Sommelier at La Trompette, hosting a big Piedmont-themed wine lunch. Barolos and Barbarescos aplenty litter the room, but the wine that stops me in my tracks? A 2013 Moscato d’Asti from Giuseppe Vajra. It was phenomenal, still gleefully tasty, but now with a touch of extra weight, more waxy lime skin and late-evening summer flowers, heady in its bouquet. Here she was, my white whale, and, boy, she didn’t disappoint.  “Last December, visiting La Morandina in Asti, I asked whether they had anything with a bit of age and lo! a 15-year-old magnum appeared. My stars had aligned for a second time – the wine equally lovely, offering a bit more exotic spice, cardamom and coriander seed along with the sweet creamy lime zest. Crucially, this time I could see the germ of a plan. Each year, I would buy a cast of Moscato d’Asti, building a reserve of Moscato to steadily enjoy over the coming years. I’ll be the Christmas king of deliciously sweet floral fizz. So, on the morning of 25th, I’ll be twisting the top off the second bottle from last year’s case and smugly enjoying my Moscato and crumpet as I let my mind wander over the riches I’m preparing for the coming years.”  François Cotat Sancerre Le Mont Damné and Massican Gemina – chosen by Alex Sarovich, Founder and CEO of Own Rooted Hospitality  "As the oldest of five in a large Italian family, I've learned that selecting the perfect wine is an art form that requires careful consideration of both the food and the audience. When I'm hanging out with my twin 24-year-old brothers, they're all about vibrant, crisp wines like Champagne or Sancerre. If I can get my hands on it, I love surprising them with a bottle of Cotat’s Le Mont Damné, a truly exceptional wine that never fails to impress.  “In contrast, when I'm with my mom and aunt, we lean into our Italian roots. White wines from Italy are a staple in our household, especially when we're in the kitchen, cooking and preparing a meal together. This year, I'm planning to bring a bottle of Massican Gemina to our holiday gathering in McMinnville. This beautiful white blend, composed of Greco, Falanghina, and Fiano grapes from top California vineyards, perfectly captures the essence of our family's wine appreciation – a nod to our Italian heritage with a California twist.”  Coche-Dury Meursault, Domaine de Trévallon and Jean-Michel Gérin Côte-Rôtie La Landonne – chosen by Philippe Abadie of Alvina Pernot  “First of all, we decided to open a bottle of 2022 Meursault from Domaine Coche-Dury, given to us by a client to celebrate the birth of our son Pâris, who was born on January 1st 2022. We also really like the new style introduced by Raphaël since he took over this magnificent estate. Then Trévallon: my grandfather Georges from the south of France was an unconditional fan of the estate, and during my childhood there was always a bottle on festive tables (for birthdays, Christmas, New Year, etc) – so this will be a little wink to him. Then last, a bottle of Côte-Rôtie La Landonne by Jean-Michel Gérin. The story goes back to a few weeks after I first met Alvina, for this is the bottle of red we drank on our first restaurant date.”  2022 Domaine Yui A Rouge – chosen by Carlito Chiu, Wine Director at Andō, Hong Kong  “Established in 2019 by the dynamic husband-and-wife duo Tetsuya and Aya Sugiyama, Domaine Yui is a Japanese winery with a profound mission of unity and togetherness. Inspired by the meaning of the Japanese word “yui”, “to connect/link”, the Sugiyamas are dedicated to bringing people together through their shared love for wine and agriculture. Their A Rouge is a remarkable expression of Burgundy-style red wine crafted in Hokkaido, Japan – a specific blend of Pinot Noir, Chardonnay and Pinot Gris that showcases the region’s terroir. It is particularly special to me because it embodies the innovative spirit of Japanese winemaking, while honouring traditional techniques. For me, this wine represents the potential of Japanese terroir and the dedication of winemakers committed to producing world-class wines, making it a wonderful choice for celebrating the joy and warmth of the Christmas season.”  Read more Editorial

Old, low-yielding vines. I’ve written that phrase more times than I’d like to confess. But how much does it really mean when it comes to the quality of the wine in your glass? The 2023 vintage in Burgundy (read our full vintage report here) produced generous yields. In farming terms, that’s a good thing: a plentiful crop that restocks the cellars (and coffers). But the sheer volume of fruit (“a wall of grapes”, as Bouchard’s winemaker Frédéric Weber told us) posed its own challenge – and much of our time in the region’s cellars this year was spent diving into how they managed, or controlled, the yield. It seemed fitting, therefore, to address the topic in greater detail. In the Old World, appellation rules will limit yields, with the yield generally decreasing as you move up the appellation system (see below a table detailing the maximum yields for Burgundy, for example). Of course, this indicates a relationship between yield and quality, implying less is better – and there is no doubt that excessive yields don’t produce fine wine. But how low is too low? There is a fashion for prizing vines that barely manage to ripen a bunch or two, but do they really make better wine than those producing a decent crop? Beyond our obsession with rarity, what are the consequences of less fruit per vine – and therefore, what does more entail? A note on measuring yield Before we get into the weeds of the matter, let’s address how we talk about yield. In the Old World, the most common measurement of yield is hectolitres per hectare (hl/ha), measuring the volume of juice or wine per hectare of vineyard area. In Champagne the standard measure is kilos per hectare and in Italy you may see reference to quintales per hectare (qt/ha or q/ha, with one quintal translating to 100kg), while in the US, producers are more likely to use tons per acre. We’ll dive further into the many variables here, but it’s worth highlighting that vine density isn’t taken into account by any of these measurements. Although a higher number of vines per hectare will generally mean a higher yield across the vineyard, the increased competition will also likely reduce the yield per vine. For this article, we have spoken to producers from a range of regions, but do note that yields are not comparable between varieties or region. Climate – with heat, sunlight and water availability, as well as the varying size of berries and clusters of any given variety, mean that there is no number that can be deemed a global average when it comes to yield. (Do look at this table compiled by the Wine Advocate’s William Kelley, comparing vine density, cluster weight and juice yields for various classic fine wine regions, to give you an idea of the differences between regions.) Given this, “high” and “low” yields aren’t equated to specific numbers here, but the concept discussed more broadly – and arguably more relevantly for those of us drinking wine rather than making it. Bearing all of this in mind, extremely approximate conversions can be made as follows: one tonne per hectare is approximately 7hl/ha, while one ton per acre is around 17.5hl/ha (Oxford Companion to Wine). Yields: how low is too low? “It’s not extreme mythology: low yields produce better quality,” Cerbaiona’s Matthew Fioretti tells me; for him, high yields risk dilution and sanitary problems – and at excessive levels, that is certainly true. But, as Myriad’s Mike Smith told me, the relationship is “not linear”. Mike Dunn (Dunn Vineyards) generally has low yields, but that’s not necessarily about concentration, he explains: it’s simply about how much they can ripen before winter hits. Up on Napa’s Howell Mountain, their poor soils and farming (avoiding irrigation and fertilisation where they can) naturally produce lower yields. He recently changed some of their Cabernet Sauvignon to cane (rather than cordon) pruning and, although they’re getting more fruit off the same vines, there’s been no loss in quality. “It’s all relative,” says Ivan Massonnat at Belargus in Anjou. He points to Saumur with its limestone soils, where producers can crop 45-50hl/ha without a problem, but on the schist soils that lie beneath his vineyards: “Forget about doing much more than 30-35hl/ha,” he says. And even that has proven challenging for him. In the seven vintages he’s produced at the estate, only two have come close to 30hl/ha, with the average around 15hl/ha, simply due to the challenges of each vintage. He’d have loved to crop more – but nature had other ideas, and vignerons have to adapt to the vintage. Massonnat explains how if you farm to produce yields that are overly low, you can end up with fruit that has high technical, or sugar, maturity, but isn’t yet phenolically ripe – leading to unbalanced wines. Smith echoes this, talking specifically about Beckstoffer Dr Crane, one of Napa’s legendary vineyards, which he finds likes to produce more – around five tons an acre (versus four in most of the vineyards he works with). He sees producers cropping to just three tons per acre there, and in warm vintages the fruit ripens too quickly for the phenolics to catch up. Philippe Bascaules – who was first appointed Estate Director at Ch. Margaux in 1990 – offers an interesting perspective, arguing that there’s no direct relationship between yield and quality. In Bordeaux in the 1970s, he tells me, yields were consistently low – 25-30hl/ha, with wines that were inconsistent. As the wines became more popular, with demand from the US in particular for the 1982 vintage, producers started aiming for significantly higher yields and chaptalizing much more. Soon, average yields had doubled to 50-60hl/ha – a level that was unsustainable, especially in challenging vintages such as 1992, ’93 and ’94. Gradually they implemented changes, introducing green-harvesting (in 1986 at Ch. Margaux) and reducing fertilisation levels in the 1990s. Today, he and his team aim for around 45hl/ha, “a good production” in his mind – but a level which also offers insurance against inclement conditions. Lowering yields is something that, for him, has brought greater consistency to both the estate and region across vintages – ensuring they can ripen the crop each year. Deliberately reducing the yield beyond this, however, wouldn’t offer any serious benefit, he says. Similarly, across the Durantou family’s estates on the Right Bank, including Ch. l’Eglise-Clinet, Noëmie Durantou Reilhac targets a yield of circa 42hl/ha. “The vine wants to produce fruit,” she says, “so if the yield is really, really low, something went wrong.” For her, it’s the balance that matters most. With very high yields, the resulting wines will lack concentration (“You cannot make in tanks what nature hasn’t done before,” she says), but equally if the berries are so small that there is barely any juice, you’ll have little but tannins left to work with. And, while hail or frost will reduce your yield, they won’t result in greater concentration. “I think it just comes down to stress,” Dunn tells me. And that’s a common thread for several producers, arguing that vines need to struggle to produce quality. As Sébastien le Golvet – of Champagne Henri Giraud, who works with the poor soils of Aÿ – says, “genii are born of suffering”. Suffering doesn’t always mean lower yields, however: arguably, Dunn says, in high-vigour sites, keeping higher yields will help increase stress, pushing the vine to work harder – and therefore produce higher quality. Elements impacting yield While it’s impossible for us to address every factor that influences yield, it’s worth – relatively briefly – highlighting a few additional influences beyond site (with poorer or richer soils), variety and vintage: Trellising: Trellising – the shape in which a vine is trained – can be used to control yield. At Cerbaiona, Fioretti emphasises how using alberello or bush vines is key to helping contain Sangiovese’s natural vigour. At Tiberio, Cristiana Tiberio’s oldest vines are pergola-trained, with a traditional Abruzzese system that encourages competition but also increases the canopy to aid photosynthesis and ripening. Vine material/rootstock: The material used in a vineyard is integral (as with Quinta do Noval’s Nacional vineyard, see below). Mike Dunn, for example, mentioned how one of his older vineyards was planted on St George rootstock, known for shatter and therefore limiting yields even further. Jean-Marie Fourrier (Domaine Fourrier) argues that the use of selected clones, rather than massal selection, has resulted in higher yields and the need to green harvest, something that he never does – aided further by the age of his vines (see below for more on this). Vine age: There’s no doubt that the element of vine age is conflated with yields and quality, with older vines often producing better fruit – but less of it. As Mike Dunn told me, the wines from his oldest vines are “more intriguing”, but at some point economics comes into play, and the level of production is financially unsustainable. It’s another non-linear relationship, however, as Durantou Reilhac explains: “Some 70-year-old grandmas can run and dance, and others are weaker.” Although most old vines will produce less fruit, she finds it’s far from uniform in her vineyards – and sometimes there will be young vines that produce less. Virus and millerandage: Virused vines will produce lower yields, and as with old vines, will reach a point where they are unsustainable. While on the surface virus is negative, certain producers do value the reduction in yield or slower ripening that is a result of disease – South Africa’s Hamilton Russell being one (with leafroll virus). Quinta do Noval persists with its own-rooted Nacional vineyard, suffering from phylloxera, with the vines slowly dying and yielding tiny volumes, to produce a particularly special and rare Vintage Port. Similarly, millerandage is a condition most commonly a consequence of poor weather at fruit-set, producing grape clusters with unevenly sized grapes, combining larger and smaller (or shot) berries – sometimes referenced as hen-and-chick. While this reduces yield, the phenomenon is sometimes valued for giving increased concentration to wine. Indeed, some particular clones – such as the Mendoza, Wente or Gingin clones of Chardonnay – are valued for their bunches with hen-and-chicks, and Bret Brothers, for example, even makes a special Cuvée Millerandée – with millerandée Chardonnay – from Les Quarts (a Pouilly-Vinzelles site recently awarded Premier Cru status). Cover crops: At Henri Giraud, Sébastien le Golvet feels that cover crops are essential to the quality of their fruit – and the yield. Sewn just before harvest, the cover crops provide competition up until flowering when they roll the grass mix, creating a bed that holds water and offers nitrogen to the soils, acting as a natural fertiliser – in a way both moderating then fuelling the vines’ growth. This is one hint at the extent to which the type of soils and level of organic matter, not to mention water availability, dictated by site and the farming methods, are all key. The previous vintage: There are two theories at play here. Firstly, conditions during what is known as the initiation phase of the vine cycle, which takes place alongside flowering, will dictate the yield of the following vintage. In 2023 in Burgundy for example, one of the factors in yield was that the spring of 2022 offered perfect conditions, laying the groundwork for 2023’s plentiful crop. As Sébastien le Golvet also explained, however, a large crop in one vintage can tire the vines, meaning they have less to give the following year. How wine producers manage yield The vine naturally wants to reproduce, to grow, ripen fruit and spread its seeds. Vignerons are tasked with taming the plant to focus its energies to develop fruit of concentration and complexity that will make fine wine. This is done in many ways, some of which include: Pruning: The first stage to set up the yield in an existing vineyard is pruning, leaving the appropriate number of buds per vine for the season ahead. The timing of this varies according to the producer, from December through to March, with later pruning helping delay the vine cycle, which is sometimes desirable. Alvina Pernot, for example, specifically pruned her vines shortly (ie to offer a lower crop) in 2023 to help the vines recover from the relatively high-yielding 2022 vintage. Lalou Bize-Leroy famously works with very low yields, and emphasises how important pruning is in this (Domaine Leroy harvested just under 30hl/ha in 2023, its highest ever yield – a number which would still be low by many producers’ standards). De-budding or suckering: In spring, producers will de-bud or sucker the vines, removing lateral shoots and providing further control of the potential yield, as well as the spacing and position of the crop. In 2023 in Burgundy, many producers emphasised how important this was. Hugues Pavelot described it as “drastic”, while Philippe Jouan passed through his vines twice. At Bouchard, Frédéric Weber explained how some of the buds produced two or three bunches in 2023 (rather than the normal one), meaning that even with extensive de-budding yields were very high. Green harvesting: Green-harvesting is the most discussed method of yield control, and one that divides producers. We spoke to several Burgundian vignerons who avoid it (Dominique Lafon, Jacques Devauges at Domaine des Lambrays, Philippe Jouan and Jean-Marie Fourrier, to name a few) – some of whom felt that they had no choice but to use the method in 2023, despite their best efforts. The reason against green-harvesting is that the vine will try to compensate, and that it can be avoided with managing the vineyard in other ways. That said, there are many top-tier producers that green-harvest, and feel it is key to the quality they produce (Ch. Margaux, Eglise-Clinet, Georges Noëllat and Olivier Bernstein, to name a few). And it’s not a decision that any take lightly, well aware that they are literally throwing away potential income. At Cerbaiona, Fioretti compares the vines to runners or cyclists – needing to carry as little weight as possible to get over the finish line. With Sangiovese, he finds it’s unavoidable, especially with the presence of “wings” or “shoulders” (smaller separate clusters that sit on the shoulder of the main bunch). The timing is key, and many producers emphasise the importance of green-harvesting early in the season. For Noëmie Durantou Reilhac, she aims to have this done prior to véraison to avoid twisting the stems (which would impact sap flow) and damaging the skins of the remaining bunches. She’ll do a final pass through her vineyards just before harvest, but this is a method of sorting rather than impacting the ripeness of the grapes on the vine. “There’s a certain point where you can reduce fruit, say a month away from picking, but it won’t do anything,” says Myriad’s Mike Smith. Like many producers, he favours green-harvesting mid-véraison to drop anything that is behind, helping even the ripeness of the crop – as Bascaules does at Ch. Margaux. In 2023, several Burgundy producers highlighted having to do multiple passes to reduce the crop – doing what was sometimes referred to as a “pink” or “blue” harvest on top of a green harvest. Canopy management: A vine’s leaves are its engine – responsible for photosynthesis. The larger the canopy, the larger the engine, therefore trimming the vine’s canopy can help lower its vigour, while keeping a larger leaf area can help encourage vigour. This needs to be considered alongside airflow (to avoid disease pressure) and shading of the bunches (which could delay ripening). If the canopy isn’t balanced with the volume of fruit, it can also negatively impact fruit composition – especially the acid make-up and development of colour and phenolics. Ivan Massonnat (Belargus) explained that in 2022 and 2023, for example, he used a high trellis, allowing a larger leaf area, to capture maximum light and photosynthesis to fuel the vines; but in 2022 he did the opposite, wanting to reduce the size of the “sugar machine”. It has, he notes, become common for large canopies to be used alongside low yields, especially by producers in Burgundy, something he feels has gone too far at certain addresses: “You can kill a wine with concentration,” he says. Some argue that trimming the canopy can encourage it to grow further, while others want to retain a large canopy to encourage root growth (Olivier Lamy feels that the vine has the same amount of growth above and below ground, therefore wanting to retain his canopy to the roots to drive deep into the soil). Lamy is one of a cohort of producers using “tressage”, or braiding, to tame the canopy – a technique pioneered by Lalou Bize-Leroy. For her the aim is to avoid cutting the apex (or growing tip) which would otherwise encourage the growth of lateral shoots. Producers such as Charles Lachaux have taken this even further, training vines to a single stake (more common on the steep slopes of Priorat, Côte-Rôtie or the Mosel) and weaving the shoots into distinctive arches. The relationship between yield and quality is undoubtedly a tricky one – and one that every producer I spoke to feels is deeply complex. We couldn’t touch on everything here (the tiny yields for botrytised sweet wines, for example, or typically higher yields used for sparkling wine), but there’s plenty to consider. While it remains clear that excessive yields can produce dilute wines, with so many variables play, it’s also clear that less isn’t always better. Read more Editorial
